My Favorite Plant-Based, Grain-Free Cashew Butter Cookies:

Ingredients:

8 oz(1/2 jar) creamy cashew butter

1/2 c coconut sugar

1 egg (or 1 flax egg for vegan)

1 tsp vanilla extract

1/4 tsp baking soda

Dash of salt

1/2 c favorite mix in-chocolate chips, nuts, raisins, etc.

Directions:

Preheat oven to 350 degrees. Mix all ingredients together in a bowl except mix ins.

Stir until a thick, well combined dough forms. Fold in mix ins of choice.

Spoon by tbsp onto a parchment covered cookie sheet into 12 cookies. Flatten slightly with a fork.

Bake for 10 minutes. Do not over bake.

Remove from oven and cool completely before removing from cookie sheet.
