Gluten-Free "Cherry Garcia" Cookies

Ingredients:

  • 1/2 c creamy almond butter

  • 3 tbsp softened coconut oil

  • 1/4 cup plus 1 tbsp maple syrup

  • 1 tsp vanilla extract

  • Pinch of salt

  • 1/2 c gluten free oats

  • 1/2 c plus 3 tbsp almond flour

  • 1/4 c tapioca flour

  • 1 tsp baking soda

  • 1/2 c dark chocolate chips

  • 1/2 c dried tart cherries

Directions:

  • Mix all wet ingredients together. Add dry ingredients with the exception of chocolate chips and dried cherries. Mix well. If batter is too sticky, add an additional tbsp of almond flour. Fold in chocolate chips and dried cherries. Spoon onto a parchment paper covered cookie sheet in tbsp sized balls. Flatten slightly with a fork.

  • Bake at 350 for 10-12 minutes until edges begin to brown. Cool completely before removing from cookie sheet as cookies will crumble otherwise.

Makes 15 cookies.
